It’s a legacy built on bold flavors, fresh ingredients, and the people behind the food. One of those people is Erich Whisenhunt, our Director of Food & Beverage and the creative force helping lead our culinary vision forward.
A Passion Born in a Childhood Kitchen
Some of us learn to cook in our adult lives, others discover their love for the kitchen in grade school. For Erich, it started early. “I just loved to cook at a young age,” he recalls. “I always wanted to open a restaurant and started dreaming up menus long before I had a kitchen of my own.” “
The Rio has always been a part of that dream. “I’ve been eating at the Rio since it opened in 1986. My parents loved going for the black beans – at the time, the Rio was the only place you could get them – and, of course, the margaritas. I was hooked on the Yucatán shrimp, which eventually evolved into our now-famous shrimp fajitas.” Over the years, the tacos al carbon with steak and our signature marinade also became a favorite.
Inspired by the World
Many people ask where our menu ideas come from. The truth is, they come from “everywhere and anywhere,” and we’re proud of that fact! From cookbooks, food blogs, and recipe reels, to home gardens, travel adventures, and global cuisine, our creative spark can come from any corner of the world. Our constant curiosity keeps our kitchen energized and ensures our menu is constantly evolving.
Our Favorite Dishes
At the Rio, we believe our food should be simple, fresh, and full of soul. Some of our favorite dishes to prepare are also the ones that speak most clearly to that philosophy.
Erich says, “Our table salsa and guacamole are so simple, fresh, and beautiful – they let our high-quality ingredients shine and value our goals of freshness.” He also notes that the grilled outside skirt steak, with our signature marinade and kissed by the open flame, is another standout menu item, especially when it’s wrapped in one of our freshly made flour tortillas! Finally, we have to highlight the diabla shrimp empanadas. Spicy-sweet sautéed shrimp covered in melted cheese, tucked inside a flaky pastry shell, is incredible fiery, savory joy.

The Rio is a scratch kitchen through and through. Which means everything we serve is made in-house, fresh, every day. Our dedication to freshness isn’t a slogan, it’s our standard. Running a busy restaurant comes with challenges, such as managing the flow of people, energy, and orders. Luckily, the Rio has a secret weapon – our team. Erich states, “The most challenging and the most rewarding part of my position is leading a team. You hire, train, and guide individuals to become a tight-knit crew that takes pride in what they do. That’s powerful.”

For Erich, the most rewarding part of working at the Rio is seeing guests truly enjoy themselves, offering a sense of sanctuary from the world’s troubles. “That’s our mission, to create a space where people can relax, connect, and feel taken care of.” Just as meaningful is the camaraderie behind the scenes at the Rio. Watching a team come together with a shared purpose, supporting one another to create unforgettable experiences for every guest who walks through the door.
