ALL ABOUT CHILE RELLENOS – A CLASSIC RIO DISH

The origin story of the Chile Relleno is one steeped in Mexican lore. However, one thing we can claim with certainty is that they are a Rio staple and a beloved one at that. 

Relleno in English means stuffed and if you’re curious to know what is in a chile relleno – it is typically a pepper (often Poblanos or Anaheims) filled with cheese. As with all hot peppers, cheese offsets the spice (similar to drinking a glass of milk).

How to Make Chile Rellenos

In the case of the Rio’s Rellenos, we stuff in-house roasted Anaheim Peppers, which are mild in heat, with jack and cream cheese and a mix of sauteed vegetables, including onions, green peppers and mushrooms. Guests are able to order the rellenos baked or lightly fried. If we bake them, they are batter free, but when they are fried, we first dip the Anaheims in our gluten free batter. We serve our Chile Rellenos with rice and black beans and offer a choice of sauces—though green chile is most popular.
